Horse roulades Apulian style

Ingredients for 4 servings:

  • 4 roulade(s) , from horse
  • 50 g bacon, lightly smoked
  • 50 g sheep’s cheese (Pecorino)
  • 400 g tomatoes, pureed
  • 2 garlic cloves
  • 1 large onion(s)
  • ½ jar white wine
  • basil
  • Parsley
  • ½ jar olive oil
  • salt and pepper
  • possibly meat broth or water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Filling: Finely chop the garlic cloves, a handful of basil, and parsley, place them in a bowl, and mix with the grated feta cheese. Layer the tenderized meat slices with the bacon slices, add the filling, and season with a little salt. Then roll up and tie with kitchen string. Heat half a glass of olive oil in a sauté pan and sauté the chopped onion until translucent. Add the roulades and brown well on all sides. Deglaze with white wine, add the passata, and simmer for 1.5 hours. If necessary, add a few more tablespoons of meat broth or water and season with pepper. Serve with potatoes, rice, or pasta.
