Spaghettini with fresh mushrooms, bacon and spring onions

Ingredients for 2 servings:

  • 400 g pasta (spaghettini)
  • 300 g mushrooms, brown
  • 2 cloves garlic (depending on personal taste)
  • 5 spring onions
  • 8 tbsp olive oil, cold-pressed
  • 150 g bacon, diced
  • pepper
  • Basil, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the mushrooms and slice them. Separate the spring onions (white and green parts) and slice them. Heat the oil in a pan (not too hot, as olive oil burns easily), fry the white part of the spring onions together with the bacon in the pan (add the garlic later so it doesn’t become bitter). Add the mushrooms, season with pepper, and fry them as well. Finely chop the garlic cloves. Cook the spaghettini until al dente. Add the garlic to the mushrooms. When they are done, add the green leek and fry briefly. Drain the spaghettini, add them to the pan in portions, toss with the mushrooms, and serve on a plate with fresh basil.
