Ingredients for 2 servings:

  • 2 cup(s) giant beans
  • 4 cups water
  • 3 tsp oil
  • 1 onion(s), diced
  • ½ chili pepper(s), green, diced
  • 4 garlic cloves, diced
  • 3 tomatoes, chopped
  • 2 tsp lemon juice
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp salt
  • 1 tsp parsley

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 3 hours; Total time approx. 15 hours 30 minutes

Egyptian national dish

Soak the beans overnight. Rinse and cook in double the amount of water for 2-4 hours, depending on your needs. Fry the chopped onion and chili in oil until yellowish. Then add the chopped garlic and fry until golden brown. Reduce the heat, stir in the chopped tomatoes, and cover the pan. Simmer for four minutes. Increase the heat to high and stir for two minutes until the color turns dark red. Add the cooked beans and bring to a boil. Add salt, lemon juice, coriander, and cumin. Reduce the heat and simmer, covered, for at least four minutes. Serve hot with pida bread, pickled vegetables, and green onions.
