Ingredients for 1 servings:

  • 500 g flour
  • 2 tsp salt
  • ½ cube of yeast
  • 300 ml water, lukewarm
  • ½ egg white
  • 6 tbsp water

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Make a yeast dough from the first four ingredients and let it rise overnight in the refrigerator – ideally in a plastic bowl with a lid. The next morning, knead the dough again and let it rise again at room temperature. Then divide it into three portions and shape each into a log. Score the logs with a knife. Mix the egg white with 6 tablespoons of water and brush the logs with it. Place on a baking sheet lined with parchment paper. Preheat the oven to 225°C (top/bottom heat) and place the baguettes in the hot oven. At the same time, pour 1/8 l of hot water onto the bottom of the oven. Do not open the oven door again. Bake on the second rack from the bottom for approx. 15-20 minutes. The baguettes will not be as big as store-bought ones, but they are very tasty!
