Deruni – Ukrainian potato pancakes with garlic and dill sauce

Ingredients for 4 servings:

  • 6 large potatoes
  • 1 onion(s)
  • 2 tbsp flour
  • 1 egg(s)
  • 1 pinch(s) of salt and pepper
  • Oil for frying
  • 200 ml water
  • 3 cloves garlic
  • a few sprigs of dill
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes and onion and mince them or grate them on a fine grater (star-shaped grater). Add the egg, flour, salt, and pepper and mix well. Add the potato mixture, spoonful by spoonful, to a hot pan with oil and fry on both sides. For the sauce, puree the water, garlic, dill, and salt in a blender using an immersion blender. Serve in a small bowl. Deruni is a very traditional and classic Ukrainian dish. A quick and easy evening meal. In Ukraine, deruni is usually served with garlic sauce or sour cream (crème fraîche). Garlic and dill are essential ingredients in Ukrainian cuisine and appear in many Ukrainian dishes.
