Ingredients for 4 servings:
- 1 pack of rabbit (domestic rabbit), frozen
- 1 liter buttermilk
- ½ liter broth
- 1 can/n apple – red cabbage
- 1 kg potatoes
- 1 cup of cream
- 1 shot of white, dry wine
- possibly sauce thickener
Instructions
Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes
Soak the thawed and cleaned rabbit parts in a liter of buttermilk overnight (this creates that inimitable flavor!). Then, without rinsing, place them in a roasting pan as they are. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Place the roasting pan with about half a liter of broth (I use vegetable broth) in the oven for about 20 to 40 minutes. Meanwhile, prepare the potatoes and red cabbage. Bread or bacon dumplings are also possible as an alternative to the potatoes. After braising in the oven, pour the broth and meat juices into a saucepan and thicken to make a sauce: add a cup of sweet cream and a dash of dry white wine. If desired, thicken the sauce with a sauce thickener and season to taste. A delicious dish for all seasons. Enjoy!
