French potato soup

Ingredients for 6 servings:

  • 500 g potatoes
  • 3 carrots
  • 2 stalk(s) leeks
  • 30 g butter
  • 1 ½ liters of water or chicken broth
  • 1 tsp sugar
  • salt and pepper
  • 180 ml cream
  • Parsley or chervil for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Potato carrot soup

Peel and slice the carrots. Slice the leek into rings. Melt the butter in a saucepan. Add the carrots and leek to the pan and sauté until soft. Peel, slice, and add the potatoes, stirring thoroughly. Add water or broth, sugar, salt, and pepper, and simmer for 20-30 minutes (until the potatoes are tender). Puree and stir in the cream. Sprinkle with parsley or chervil and serve. If you prefer fewer calories or a thicker soup, you can easily omit the cream.
