Ingredients for 4 servings:
- 1 kg lamb, from the leg
- 1 bunch of soup vegetables
- ½ bottle of red wine, semi-dry
- 2 tbsp oil
- 2 onions
- n. B. rosemary needles
- n. B. Thyme leaves
- salt and pepper
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 40 minutes
Wash the lamb and pat dry. Roll it in salt and pepper to create a nice crust. Heat the oil in a roasting pan and sear the lamb on all sides. The more robust the sear, the better. Cut the vegetables into bite-sized pieces and add them after searing. Add the rosemary and thyme to taste. Pour in the red wine and braise the meat, covered, over medium heat for at least two to three hours. Season to taste. I recommend potatoes and white beans with bacon as a side dish.
