Ingredients for 4 servings:
- 600 g potatoes
- 150 g cream cheese
- 1 egg(s), including the yolk
- Salt
- pepper
- 1 tbsp flour
- 1 tsp anise, ground
- Fat, for frying
- 1 kg asparagus, green or white
- 1 pinch(s) of sugar
- lemon juice
- 1 tbsp butter
- 1 cup of natural yogurt
- 2 tbsp crème fraîche
- ½ bunch of dill
- 1 stalk tarragon
- 300 g smoked salmon
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Grate the potatoes. Mix with quark, egg yolk, salt, pepper, flour, and anise. Bake 8 thin fritters in the fat. Keep warm in the oven at 100°C. Peel the lower third of the asparagus. Cook for 15 minutes in plenty of water (or other cooking method, such as AMC, see instructions there), 1 teaspoon of salt, 1 pinch of sugar, lemon juice, and butter. Mix the yogurt, crème fraîche, and chopped herbs, season with salt and pepper. Serve the asparagus with the fritters and garnish with salmon and sauce.
