Tomato sauce from Corsica

Ingredients for 4 servings:

  • 2 onions
  • 2 garlic cloves
  • 4 tbsp oil
  • 6 tbsp tomato paste
  • 10 tomatoes, peeled
  • 2 bay leaves
  • ½ tsp oregano
  • 1 piece(s) lemon peel
  • herbal salt
  • pepper
  • 6 tbsp white wine

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Sauté chopped onions and finely chopped garlic in oil. Add tomato paste and peeled tomatoes. Add spices and white wine and stir to combine. Simmer gently for about 30 minutes, longer is better. Strain if necessary, and be sure to discard the bay leaves and lemon zest. Add a generous amount of the tomato sauce to the pasta of your choice. Top with generously grated Parmesan cheese, a green salad, and a glass of white wine.
