Ingredients for 4 servings:
- 600 g meat for cooking, e.g. leg of lamb, roast beef, rib eye
- 500 g soup vegetables
- 2 large onions
- 40 g Clarified butter or butter
- 4 tbsp tomato paste
- 2 cucumber(s), sour
- 250 g sausage (beer ham)
- 1 bay leaf
- 1 tbsp capers
- 1 lemon(s)
- 1 cup sour cream
- 1 bunch of parsley for garnishing
- salt and pepper
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 3 hours 15 minutes
First, make a broth from the boiled meat. Place the meat in a pot of cold water and add the finely chopped vegetables. Season everything with salt and simmer for two hours. Then remove the meat and let it cool. Meanwhile, fry the finely chopped onions in a pot with the clarified butter until golden brown. Then add the tomato paste and 2-3 ladles of the broth. Chop the meat and the beer ham, add them, and simmer for about five minutes. Then add the diced cucumber, bay leaf, salt, pepper, and capers. Strain the remaining broth through a sieve and add it to the broth. You can add a ladleful of the vegetables, but not too much. Simmer everything for another 10 minutes and let it stand for another five minutes. Serve on a plate with a small tablespoon of sour cream, a slice of lemon, and some parsley, if desired.
