Sweet and sour pork

Ingredients for 4 servings:

  • 250 g carrot(s)
  • 200 g sprouts (bean sprouts)
  • 250 g mushrooms
  • 1 can pineapple (446 g)
  • 500 g pork schnitzel
  • 4 tsp oil
  • salt and pepper
  • 6 tbsp soy sauce
  • 125 g tomato ketchup
  • some pineapple juice, if necessary
  • Cayenne pepper

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Peel the carrots, cut them into 5 cm pieces, then slice them lengthwise and then cut them into sticks. Wash the sprouts in hot water and drain. Slice the mushrooms. Drain the pineapple, reserving the juice. Rinse the meat, pat it dry, and cut it into thin slices. Heat the oil in a wok or large frying pan and fry the meat for about 3 minutes, turning occasionally. Season with salt and pepper. Then remove from the pan and keep warm. Sauté the carrots and sprouts in the existing frying oil for about 3 minutes. Add the mushrooms and cook for another 2 minutes. Then remove the vegetables from the pan. Add the pineapple juice and soy sauce and bring to a boil. Stir in the ketchup. Season to taste with salt, pepper, and cayenne pepper. Add the meat, vegetables, and pineapple to the sauce and stir until warm. Rice goes well with it.
