Ingredients for 1 servings:

  • 60 g sugar
  • 120 g butter, cold, diced
  • 180 g flour
  • 250 g double cream cheese
  • 2 tbsp cane sugar
  • 2 cookies (butter cookies)
  • 3 drops of flavoring (orange flavoring)
  • 20 apricots
  • e.g. milk
  • possibly powdered sugar for dusting

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Knead the sugar, butter, and flour into a dough and chill for 30 minutes. Meanwhile, preheat the oven to 180°C (top/bottom heat). Line a 26 cm springform pan with the dough, forming a 2 cm high rim. Prick the base with a fork to prevent it from curling during baking. Then pre-bake the base for about 10 minutes. Meanwhile, crumble the butter biscuits and mix with the cream cheese, brown sugar, and orange flavoring, stirring with a tablespoon of milk if desired until creamy. Remove the base from the oven and spread the cream on top. Halve the apricots, remove the stones, and arrange them on the base, curved side up. Bake for 30 minutes. After baking, sprinkle with powdered sugar, if desired.
