Ingredients for 4 servings:

  • 250 g Chinese egg noodles
  • 500 g chicken breast fillet(s)
  • 1 bunch of spring onions
  • 1 piece(s) ginger
  • 2 cloves garlic
  • 1 chili pepper(s), dried
  • 5 tbsp oil, neutral
  • 3 tbsp soy sauce
  • 1 tbsp lemon juice
  • Salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the noodles in 2 liters of boiling salted water for about 5 minutes (follow the package instructions). Do not overcook them, as they will be fried later. Drain in a sieve and let them drain. Cut the chicken into finger-thin strips. Wash the spring onions and slice them into rings. Peel the ginger and garlic and chop very finely. Crumble the chili peppers and chop them finely. Heat 3-4 tablespoons of oil in a large pan or wok and fry the chicken vigorously for 1-2 minutes. Push the chicken to the side and fry the onions, ginger, garlic, and chili in fresh oil in the middle. Finally, add the noodles, mix, drizzle with soy sauce and lemon juice, and season to taste.
