Provençal pasta salad

Ingredients for 4 servings:

  • 250g penne
  • 1 tbsp olive oil
  • salt and pepper
  • 25 g olives, black, without stones
  • 25 g tomatoes, dried
  • 400 g artichoke hearts , (can)
  • 125 g zucchini, small
  • 125 g cherry tomatoes
  • 2 tbsp yogurt
  • 1 tbsp orange juice
  • 1 bunch of basil
  • 100 g mixed salad
  • 1 can of tuna

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the penne according to the package instructions until al dente, drain, and transfer to a bowl. Add olive oil, salt, and pepper. Chop the olives and tomatoes, mix with the pasta, and let cool. Mix in the halved artichoke hearts, zucchini slices, halved cherry tomatoes, and shredded tuna. Mix together 2 tablespoons of passata, yogurt, orange juice, finely chopped basil, salt, and pepper to make a dressing. Pour over the salad and mix well. Wash the lettuce leaves, pat dry, divide among 4 plates, and arrange the pasta salad on top.
