Pumpkin with soy syrup

Ingredients for 4 servings:

  • 250 g pumpkin flesh
  • 120 g sugar
  • 5 cm ginger root, grated
  • 6 tbsp soy sauce
  • 6 tbsp water
  • pepper, black
  • Sesame, roasted
  • some chives or garlic greens

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Korean recipe for a small appetizer

Dice the pumpkin flesh into approximately 2 cm cubes and let it steep in boiling water for 2 to 3 minutes. Heat the sugar, water, soy sauce, black pepper, and ginger in a pan until the sugar has almost dissolved. If you like it spicier, you can also add chili flakes. Add the drained pumpkin cubes, stir, and simmer gently, barely covered, for 15 minutes. Check and stir regularly. The pumpkin will then be soft and glazed with a thick soy syrup. Serve in small bowls. Sprinkle with toasted sesame seeds and garnish with a few sprigs of chives or garlic greens.
