Ingredients for 4 servings:
- 4 tuna steaks (200 g each)
- 5 spring onions
- 7 tbsp balsamic vinegar
- 5 tbsp water
- 3 tbsp ginger, freshly grated
- salt and pepper
- 4 tbsp oil, neutral
- 8 tbsp sesame seeds
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Wash the tuna steaks, pat dry, and place in a shallow dish. Trim the spring onions, finely slice them with the light green parts, and mix with the balsamic vinegar, water, and ginger. Pour the marinade over the tuna, cover the dish with foil, and let it marinate in the refrigerator for 1 1/2 hours, turning occasionally. Then remove the fish from the marinade and season with salt and pepper. Heat the oil in a pan and fry the tuna on both sides until the steaks are just below your desired doneness, pink or well-done. Remove from the pan, brush both sides with a little marinade, and press into the sesame seeds to adhere. Return to the pan briefly, fry on both sides until golden brown, and serve with the marinade.
