Ingredients for 10 servings:

  • 500 g flour
  • 3 eggs
  • 50 g sugar
  • ½ lemon(s), zest
  • ½ tsp salt
  • 20 g yeast
  • 100 g margarine
  • Milk, lukewarm
  • Jam (strawberry) for filling
  • 1 egg white
  • Oil, neutral, for frying
  • powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Make a yeast dough from the baking ingredients and let it rise in a cold place. Roll out to about 1/2 cm thick, cut out circles with a (mustard) jar, and place about 1 teaspoon of jam in the center. Brush the edge of a second dough circle with egg white and press firmly onto the jam circle. Let the doughnuts rise in a warm place. Heat the oil in a deep fryer (use a skewer to test this) and place the doughnuts, upside down as they were, in the deep fryer and fry until browned on both sides. Drain in a sieve and immediately sprinkle with powdered sugar.
