Ingredients for 4 servings:
- 1 cucumber(s)
- ½ tsp salt
- 1 tbsp, levelled sugar
- 2 tbsp vinegar, light
- 1 medium-sized garlic clove(s), chopped
- 1 medium-sized onion(s), chopped
- 1 tbsp lemon juice
- ½ tsp fish sauce, anchovy paste or anchovies from the can
- ½ tsp chili powder, alternatively pepper
- 2 tbsp sesame seeds or sesame oil
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
quick cucumber kimchi “Schland-style”
Prepare all ingredients and mix well in a bowl. Taste and adjust seasoning if necessary. Serve as an additional side dish to an Asian meal or simply with rice. Keeps refrigerated for up to two days.
