Ingredients for 1 servings:
- 50 g breadcrumbs, white, coarsely grated
- 4 eggs, size M
- 2 pinches of salt
- 1 tsp turmeric powder
- 1 pinch(s) of mace powder
- 1 tbsp lemon juice
- 120 g wheat flour type 405
- 30 g tapioca flour
- 100 g desiccated coconut
- 30 g medicinal beans (kacang kapri), roasted, unseasoned (alternatively large peanuts)
- 60 g sugar, fine, white
- 20 g candied orange peel, finely diced
- 15 g drink powder (Nutrisari Orange)
- 70 g margarine, melted
- 20 g baking powder
- Margarine for the mold
- n. B. Medicinal beans (kacang kapri)
- n. B. flowers and leaves

A sweet treat not just for kids. Recipe from Lombok, Indonesia.
Grease a muffin tin with margarine. In a bowl, whisk one egg with a pinch of salt, turmeric powder, mace powder, and lemon juice. Add the breadcrumbs and mix until smooth and set aside. Weigh the flours, combine, and mix well. Grind the broad beans in a food processor (Moulinex or similar) until coarsely ground. Mix this with the coarsely shredded coconut. Melt the margarine in a bain-marie, heating to no more than 50°C. Let cool to 35°C. Place the remaining eggs in a sufficiently large bowl with the granulated sugar and a pinch of salt. Using a whisk and a food processor, beat the egg yolk and sugar mixture until almost white and foamy. Preheat the oven to 180°C (top/bottom heat). Mix the swollen breadcrumbs into the foam and stir until smooth. Then add the melted margarine and mix well. One after the other, stir in the flour mixture, coconut mixture, candied orange peel, orange juice drink powder, and baking powder into the batter. Pour the batter into the baking pans, filling each only 90% full. Garnish with the whole green beans (see photo). Bake the muffins in a hot oven at medium heat for about 35 minutes, until golden brown. Remove the muffin tray from the oven and let cool slightly. Remove the muffins from the tray and place them on a serving plate. Garnish as desired and serve while still warm.
