Emily's spicy vegetable stir-fry

Ingredients for 4 servings:

  • 8 carrots
  • 5 spring onions
  • 1 piece(s) ginger, fresh
  • 5 garlic cloves
  • 1 cucumber(s)
  • 2 chili peppers, red
  • 2 chili peppers, green
  • 2 tbsp five-spice powder
  • 3 tbsp oil (walnut oil)
  • 3 tbsp rice vinegar
  • 2 tbsp sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 37 minutes

Wash the carrots and cucumber and cut them into approximately 3cm long sticks. Slice the spring onions into small rings. Slice the garlic. Peel the ginger and dice it. Wash the chilies and chop them into small pieces. Heat the oil and fry the chilies, ginger, and garlic. Add the sugar, spice powder, and vinegar and reduce to a sauce. Add the vegetables and simmer for about 10 minutes.
