Ingredients for 4 servings:

  • 1 kg beef (cow udder), well washed
  • 1 onion(s)
  • 2 carnations
  • 1 bay leaf
  • 1 tbsp butter
  • 2 tbsp flour
  • 250 ml dry white wine

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the cow’s udder, cut into pieces, in boiling water with onion, cloves, and bay leaf for about 90 minutes. Make a roux from the butter and flour and add a little udder juice. Season with white wine. Serve the Schnickerli with potatoes or mashed potatoes and a Franconian Silvaner wine.
