Riesling Schnitzel

Ingredients for 4 servings:

  • 4 pork schnitzels or turkey
  • ⅛ liter wine (Riesling)
  • 3 tbsp crème fraîche
  • 250 g mushrooms or mixed mushrooms
  • 1 small onion(s)
  • butter
  • salt and pepper
  • Parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Fry the schnitzels. Deglaze the pan with 1/8 liter of Riesling. Stir in 3 tablespoons of crème fraîche, season with a little salt and pepper, and pour over the schnitzels in a baking dish. Sauté the mixed mushrooms with butter and a finely chopped onion. Season with salt and pepper, finely chop the parsley, and toss everything onto the schnitzels. Bake in an electric oven at 200°C for about 15-20 minutes. I like to bread the schnitzels before baking, but it’s not necessary. You can use fresh mushrooms or canned ones. This recipe can also be prepared the day before, making it perfect for small or large gatherings.
