Ingredients for 4 servings:
- 500 g asparagus (soup asparagus)
- 40 g butter
- 40 g flour
- 1 egg yolk
- cream
- white wine
- salt and pepper
- nutmeg
Instructions

Wash and peel the asparagus, cut into approximately 3 cm long pieces, and cook in 1.5 liters of salted water until soft. Make a light roux from the butter and flour, then add the asparagus water while whisking. Bring the soup to a boil and simmer gently for about 10 minutes, stirring frequently. Add the cooked asparagus and season with salt, pepper, white wine, cream, and nutmeg. Bring to a boil briefly, remove the asparagus soup from the heat, and skim it with the egg yolk.
