Fried rice with mushrooms

Ingredients for 3 servings:

  • 300 g chanterelles
  • 200 g broccoli
  • 3 onions, red
  • 3 cloves garlic
  • 3 tbsp oil
  • 3 eggs
  • 70 g dried tomatoes in oil
  • 300 g rice, cooked
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the chanterelles and broccoli. Divide the broccoli into small florets. Slice the broccoli stalks. Cook in boiling salted water for two minutes, drain, rinse with cold water, and set aside. Peel the onions and garlic. Finely dice the garlic. Quarter the onions and slice them. Stir-fry the garlic in a tablespoon of oil in a wok or large frying pan until translucent. Whisk the eggs, iodized salt, and pepper, add, and stir until set. Remove from the pan and set aside. Heat the remaining oil in the wok. Add the onions and chanterelles and stir-fry for about three minutes. Add the broccoli, tomatoes, and rice and stir-fry for another three minutes. Season with paprika, pepper, and salt.
