Potato and pea curry

Ingredients for 4 servings:

  • 700 g potatoes, diced
  • 225 g peas (frozen)
  • 1 tbsp vegetable oil
  • 1 onion(s), cut into strips
  • 2 garlic cloves, crushed
  • 2 cm ginger, peeled
  • 1 tbsp tomato paste
  • 1 tbsp coriander leaves, freshly chopped
  • 1 pinch of salt
  • 4 tsp curry powder, medium hot

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Aloo-matar

Boil the potatoes for 10 minutes. Drain, reserving the liquid, and return to the heat. Add the peas and bring the water to a boil. Drain immediately, then measure out 150 ml of water. Heat the oil in a pan and fry the onion, garlic, and chopped ginger for 5 minutes until browned. Add the curry powder, tomato paste, the reserved water, potatoes, and peas. Cook for another five minutes and serve with chopped coriander leaves.
