Ingredients for 1 servings:

  • 3 eggs
  • 200 g sugar
  • 1 tbsp cinnamon, ground
  • ½ tsp clove(s), ground
  • 150 g almonds, ground
  • 1 tsp candied lemon or orange peel, very finely chopped
  • 300 g flour
  • 100 g powdered sugar
  • 2 tbsp pistachios, finely chopped
  • Flour for the work surface

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Christmas cookies

Separate one egg. Beat the sugar with the remaining two eggs and the egg yolk with a hand mixer for about 3 minutes until the sugar is completely dissolved. Add the spices, almonds, candied orange or lemon peel, and enough sifted flour to form a firm dough. Roll out the dough on a floured surface to a thickness of 1/2 cm. Cut out stars or other Christmas shapes and place them on a baking tray lined with baking paper. Bake in an oven preheated to 190°C (gas mark 2-3, fan oven 160°C) for about 8 minutes. Meanwhile, for the glaze, mix the remaining egg whites with the sifted icing sugar and brush over the stars. Sprinkle immediately with the pistachios.
