Kale in mustard-beer sauce

Ingredients for 4 servings:

  • 50 g butter
  • 100 g onion(s), chopped
  • 1 kg kale, fresh, then without stalk or frozen, roughly chopped
  • 2 tbsp mustard seeds
  • 200 ml beer, preferably a dark variety
  • 2 tbsp oat flakes
  • 500 ml cream or soy cream
  • 2 tbsp mustard, medium hot
  • 1 tbsp salt
  • 1 tbsp vegetable broth
  • 1 tbsp honey
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Heat butter in a saucepan. Add the onions and fry until browned. Chop the kale, if desired, and add it. Pour in a little water and simmer for 15 minutes. Once the water has evaporated, deglaze with the beer. Add the oatmeal and bring to a boil. Add cream and mustard. Season to taste with the spices and honey. Serve with potato and vegetable rösti or boiled potatoes.
