Ingredients for 4 servings:
- 1 kg tomato(s) (Roma tomatoes)
- 1 pack of feta cheese
- 1 small can of green olives
- 100 ml olive oil
- 1 garlic clove(s)
- 1 bag of peppermint tea
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Wash the tomatoes and slice them fairly thinly, then arrange them in a baking dish. The bottom should be completely covered; you may need more or fewer tomatoes depending on the baking dish. Crumble the feta cheese and sprinkle over the tomatoes. Halve or third the olives and also scatter them over the tomatoes. Season everything with salt and pepper. Pour the olive oil into a small bowl, press in the garlic clove, and add the peppermint tea from the bag (cut open the bag and empty it). Stir well and spread it over the tomatoes with a tablespoon. Place the dish in the oven at 175°C (top/bottom heat) for about 45 minutes. The tomatoes make a refreshing side dish for a barbecue.
