Ingredients for 4 servings:
- 500 g minced chicken or turkey
- 4 carrots
- 2 m.-sized onion(s)
- 1 garlic clove(s)
- 1 bunch of parsley
- 200 g low-fat curd cheese
- 8 g salt
- 2 g pepper
- 1 tsp curry powder
- 1 tsp marjoram
- 1 tsp mustard, medium hot
- 1 egg(s)
- some sunflower oil or rapeseed oil for frying the meatballs

Peel and chop the carrots, onions, and garlic. Wash the parsley, shake it dry, and chop it as well. Mix all ingredients well. This will form a rather mushy batter. Heat a pan and add a little sunflower or rapeseed oil. Using a large spoon, pour the batter into the pan, just like you would for potato pancakes, and fry the meatballs. The quark and egg ensure that the meatballs become nice and firm when baked. Notes: Ready-made minced poultry isn’t readily available everywhere. So I ground the poultry myself using my small meat grinder. I roughly chopped the carrots, onions, garlic, and parsley and put them through the meat grinder. This saved me the hassle of chopping them. After letting them sit for a day, the meatballs taste even better. All of the ingredients together have only about 850 kcal (plus the oil in the pan). However, the meat and quark contain a lot of protein, making them a good fit for a protein-rich diet.
