Beetroot salad

Ingredients for 4 servings:

  • 500 g beetroot, pre-cooked
  • 2 apples
  • 100 g mixed nuts
  • 150 g feta cheese
  • 1 small onion(s)
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp mustard, medium hot
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 pinch(s) of sugar
  • 1 dashes lemon juice

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Grate the beetroot balls into coarse pieces. Then peel the apples, remove the cores and also grate them into coarse pieces. Chop the nuts into small pieces. You can choose which nuts you use and how large the chopped pieces are as you like. For example, I used nuts from a premium nut mix. Next, cut the feta and the small onion into small cubes. Then mix everything together with a squeeze of lemon. For the dressing, it’s best to use a tall container. Now measure out three tablespoons of olive oil, add a tablespoon of balsamic vinegar and a teaspoon of mustard. Then mix everything together and season with a pinch of salt, pepper and a little sugar. Instead of sugar, you could also use a very small squeeze of sweetener, but only a little. Now pour the dressing over the salad and mix it together.
