Pasta with pumpkin, spring onions and mountain cheese

Ingredients for 1 servings:

  • 100 g Hokkaido pumpkin(s) in small cubes
  • 1 spring onion(s) (young onions) with the green part cut into rings
  • 50 g mountain cheese, grated or cut into small cubes
  • salt and pepper
  • chili powder
  • Sage, fresh or dried
  • nutmeg
  • coriander
  • 100 g pasta
  • 1 handful of cocktail tomatoes
  • 1 handful of pumpkin seeds

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta according to the package instructions. Sauté the spring onions in a little oil, add the pumpkin and sage, and sauté for about 4 minutes. Add the quartered tomatoes and sauté for another 5 minutes, stirring occasionally. Add a little of the pasta cooking water if desired. After 5 minutes, stir in the mountain cheese and add the pasta. Mix everything well and season to taste. Sprinkle with the pumpkin seeds before serving.
