Celery – mustard vegetables with roasted apple

Ingredients for 2 servings:

  • 2 onions, chopped
  • 300 g celeriac, cut into thin sticks
  • 2 tbsp olive oil
  • 100 ml vegetable stock
  • 2 tsp mustard, grainy
  • 1 tsp mustard (Dijon mustard)
  • 1 apple, sour, cut into 1cm thick slices
  • 50 g tofu (silken tofu)
  • 2 tsp lemon juice
  • 1 tbsp walnuts, coarsely chopped
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the onions and celery in 1 tablespoon of oil. Add the vegetable stock and both mustards, cover, and sauté the celery until just tender. Fry the apple slices in 1 tablespoon of oil until golden brown on both sides. Add the silken tofu to the celery and season with salt, pepper, and lemon juice. Serve garnished with walnuts and apple slices.
