Turkey and bean rolls

Ingredients for 1 servings:

  • 60 g green beans
  • 1 tbsp sherry vinegar
  • ½ tsp Dijon mustard
  • some black pepper, freshly ground
  • 2 tsp olive oil
  • 130 g mango(s)
  • 3 sprigs of basil
  • some cayenne pepper
  • 70 g turkey breast slices, smoked
  • ½ wholemeal roll

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Bring salted water to a boil. Wash and trim the beans, and cook for seven to eight minutes until al dente. Meanwhile, for the marinade, combine the vinegar, mustard, salt, and pepper, then whisk in the oil. Drain the beans, rinse in ice-cold water, and drain well. Toss the beans in the marinade while still lukewarm and let stand for about 30 minutes. Peel and finely dice the mango. Pluck the basil leaves from the stems, grate them, and roughly chop them. Blend both together until smooth and season well with salt, pepper, and cayenne pepper. Brush the turkey slices with a little marinade, arrange the beans on top, and roll them up. Serve with the mango sauce and the bread roll for dipping.
