Baked pumpkin with feta

Ingredients for 2 servings:

  • 1 m.-sized pumpkin(s) (Hokkaido)
  • 3 tbsp olive oil
  • salt and pepper
  • 4 slices of bacon
  • 100 g feta cheese

Wash the pumpkin, halve it, remove the seeds, remove any damaged parts and cut it into slices and/or small pieces. If you have different sizes, some pieces will be softer or crunchier than others, which might be appealing to those who like it. Place the slices and pieces on a baking tray and toss to coat with olive oil, salt and pepper, preferably with your hands. Then spread the pumpkin in a single layer on the tray. Tear the bacon into pieces with your fingers and place it on the pumpkin. Crumble the feta cheese into pieces with your hands and spread it all over the mixture. Bake the whole thing in a preheated oven at 200°C (top/bottom heat) for 25-30 minutes, depending on the size of the pieces. The other ingredients you need vary depending on the size of the pumpkin! If you have a very large Hokkaido pumpkin, you can use a little more of everything. As a main course, a medium-sized pumpkin is enough for 2 people, as a side dish, for example, a salad with tomatoes and lettuce is enough. For example, with roasted chicken breast you can count on one medium-sized pumpkin for 4 people.
