"Komme Djoosh" – Persian recipe with curd and turmeric

Ingredients for 2 servings:

  • 250 g quark, 20%
  • 100 ml water, lukewarm
  • 1 egg(s)
  • 1 tsp turmeric powder
  • 2 onions
  • 2 tomatoes
  • 1 tbsp oil
  • 5 g butter
  • 20 g walnuts
  • salt and pepper
  • 1 roll

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Mix the quark and egg in a bowl. Add the lukewarm water and stir until the mixture becomes creamy. Season with 1 teaspoon of turmeric. This will give the dish a cheerful, flavorful yellow color. Dice the onions and tomatoes. Add the oil to the pan and heat, then the butter. The oil will prevent the butter from burning. First, add the onions and fry until lightly caramelized. Now add the tomatoes, stir, and simmer. Meanwhile, crush the walnuts (with a pestle) and then add them to the pot. Season with salt and pepper, stir once, and add the quark mixture to the pot. Make sure the walnuts are not fried for more than a minute, otherwise the dish can become bitter. Simmer the mixture over low heat for about 5 minutes. Serve the dish with pieces of bread, as is customary in Persian cuisine. “Komme Djoosh” is a healthy vegetarian dish from Iran. It’s very easy to prepare.
