Pepper and tomato relish

Ingredients for 1 servings:

  • 3 bell peppers
  • 250 g cherry tomatoes
  • 3 shallots
  • 1 garlic clove(s)
  • 1 red chili pepper(s)
  • 1 sprig(s) rosemary
  • 1 tsp smoked paprika powder
  • 100 g sugar
  • 125 ml apple cider vinegar
  • e.g. olive oil
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Finely dice the shallots, garlic, and chili; finely chop the rosemary; dice the bell pepper; and finely chop the tomatoes. Heat olive oil in a saucepan. Sauté the shallots, garlic, chili, and rosemary until translucent. Add the paprika and continue to sauté. Then add the diced bell peppers, tomatoes, sugar, and vinegar. Season with salt and pepper. Once boiling, reduce the heat and simmer until the relish reaches the desired consistency.
