Ingredients for 1 servings:

  • 4 large kohlrabi leaves with stem, cut off at the tuber
  • 300 ml plant milk (plant drink), variety as desired
  • 1 tbsp oil
  • 1 tsp vegetable stock, granulated
  • n. B. Salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Wash and finely chop the kohlrabi leaves. Heat the oil in a saucepan and brown the leaf strips. Deglaze with the plant-based milk and stir in the broth. Reduce the heat and simmer with the lid on for a few minutes, stirring frequently to prevent the milk from burning. Finally, purée the soup with a hand blender until frothed. Add salt if desired.
