Chia coconut pudding with strawberry puree

Ingredients for 2 servings:

  • 200 ml coconut milk
  • Sweetener or sugar
  • 4 tbsp chia seeds
  • 150 g strawberries
  • 2 tbsp powdered sugar
  • Coconut flakes

Sweeten the coconut milk with the appropriate amount of sweetener or sugar to taste. Add 2 tablespoons of chia seeds to each of two dessert glasses, divide the coconut milk equally, and stir. Let the pudding sit in the refrigerator for at least 2 hours. In the meantime, puree the strawberries with the 2 tablespoons of powdered sugar. After 2 hours, pour the strawberry puree over the coconut pudding and sprinkle with coconut flakes. Because the coconut milk thickens in the refrigerator, the pudding will be firmer than usual. If you don’t like this, you can use less chia seeds. Instead of the strawberry puree, you can also use pineapple puree or any other fruit you like. The amount of powdered sugar may need to be adjusted.
