Kohlrabi Bruschetta Style

Ingredients for 2 servings:

  • 1 kohlrabi
  • 4 tomatoes
  • ½ bunch of spring onions
  • 60 g Gouda, diced
  • 200 ml broth
  • Spice mix (tomato spice)
  • salt and pepper
  • 1 tbsp olive oil
  • some oil for frying the kohlrabi

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel the kohlrabi, cut into 1 cm thick slices, and simmer in a pan with the broth for 10 minutes. Then fry the slices in a little oil. Meanwhile, finely chop the tomatoes and spring onions. Mix both with the spices and diced Gouda cheese, stir in a tablespoon of olive oil, and mix well. Spread the vegetable and cheese mixture on the kohlrabi schnitzels. Bake briefly in a preheated oven at 200°C (top/bottom heat) until the cheese has melted.
