Ingredients for 6 servings:
- 1 tbsp vegetable oil
- 1 onion(s), chopped
- 1 garlic clove(s), squeezed
- 1 tsp salt
- 1 tbsp ginger root, freshly grated
- ¼ tsp chili sauce
- 600 g sweet potatoes
- 3 cups water
- 3 cup(s) tomatoes, pureed
- 1 cup(s) peanuts, freshly roasted, chopped or 1/2 cup peanut butter
- ½ tsp allspice powder
- 2 tbsp coriander or 1 spring onion, chopped

West African Peanut Soup
Preparation: Use a 250 ml cup as a measure. Heat the oil in a saucepan, add the onion, and sauté until translucent. Add the ginger and garlic and sauté for 1-2 minutes. Add the diced sweet potato, water, and salt, and bring to a boil. Reduce the heat and simmer for 15-20 minutes, until the sweet potatoes are tender. Add the passata, peanuts or peanut butter, allspice, and chili sauce. Blend with a hand blender and return to the heat. Garnish with cilantro or spring onions.
