Broccoli and almond soup

Ingredients for 4 servings:

  • 700 g broccoli
  • 50 g almonds, very finely ground
  • 500 ml vegetable broth, vegan
  • 250 ml plant milk (plant drink), unsweetened

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Spread the ground almonds on a baking sheet and roast in the oven at 180°C for 10 minutes until golden brown. Steam the broccoli in a saucepan for 5-7 minutes or boil it in a little water with the lid on. Blend the broccoli, almonds (reserve 2 tablespoons for sprinkling), broth, and plant-based milk until very finely ground in a blender. Pour into a saucepan and heat briefly. Season with pepper. Transfer to a plate and sprinkle with the remaining almonds.
