Vegetable curry

Ingredients for 4 servings:

  • 1 kg cauliflower, broccoli and carrots, mixed, frozen
  • 2 clove(s) garlic, chopped
  • 1 onion(s), chopped
  • some oil for frying
  • 2 bananas
  • 3 tbsp curry powder
  • 1 jar white wine
  • 500 g yogurt
  • e.g. salt and pepper
  • e.g. chili
  • 1 bunch parsley, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Thaw the vegetables if possible. Sauté the chopped garlic and onion in a little oil until translucent. Peel and mash the bananas, and add them. Pour the curry over them, sauté briefly, then add the vegetables. Deglaze with white wine. Simmer for about 10 minutes (a little longer if the vegetables are still frozen), then stir in the yogurt. Season with pepper, chili, and salt, and simmer for another 10 minutes. Sprinkle with chopped parsley before serving. Serve with rice.
