Ingredients for 3 servings:
- 200 g couscous, instant
- 250 ml vegetable stock, cold
- n. B. Sambal Oelek
- 2 tbsp honey
- 1 lemon(s)
- 1 bell pepper(s), yellow
- 1 red bell pepper(s)
- 1 cucumber(s)
- 4 tomatoes, pitted
- 150 g feta cheese
- 1 bunch parsley, chopped
- salt and pepper

Delicious, low-fat, slightly spicy salad, easy to prepare, ideal for grilling
Pour the cold vegetable broth over the couscous in a bowl and let it stand for 10 minutes. Meanwhile, dice the vegetables and squeeze the lemon. Dice the feta cheese as well. Add these ingredients to the couscous. Season with salt, pepper, honey, and sambal oelek. I use just under a teaspoon, but even less is enough.
