Sweet and sour peppers and zucchini with apple juice

Ingredients for 6 servings:

  • 9 bell peppers, colored
  • 4 m.-large zucchini
  • 5 onions, red, cut into thick rings
  • 4 garlic
  • 1 sprig(s) rosemary
  • Celery greens
  • 2 cups sugar
  • 2 tbsp mustard seeds
  • 1 liter of water
  • 1 liter vinegar (herb vinegar)
  • 1 liter apple juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cut the tops off the washed peppers, removing all the white parts and the seeds. Cut 4-5 equal-sized pieces lengthwise. Cut the zucchini into slices about 1.5 cm thick. Combine the water, vinegar, and apple juice with the remaining ingredients in a large pot and toss the vegetables in it. Bring everything to a boil and simmer gently for another 15 minutes. Immediately pour into hot, rinsed, screw-top jars and seal, ensuring the liquid reaches the rim and that no oxygen remains in the jar.
