Almond Foam Topping
The perfect almond foam topping recipe with a picture and simple step-by-step instructions.
- 6 Pc. Eggs
- 180 g Fine sugar
- 180 g Almonds, grated
- 0,5 St Lemon, zest
- Separate eggs. Beat the egg whites until stiff, then stir with the sugar for 5 minutes. Use the egg yolks for other purposes. Now add the grated almonds and the zest from the lemon peel.
- Sprinkle the cake base with baking flour. Berry cake: add sugar beforehand (3-4 tbsp), for currants and gooseberries add 1 pinch of baking soda to the sugar. Then mix the berries with the glaze and spread them on the cake base. Rhubarb cake: chop the rhubarb, add 3-4 tablespoons of sugar and 1 pinch of baking soda. Spread the pieces of rhubarb on the cake base sprinkled with baking flour and pour the almond foam over them.
- Bake the cake in a preheated oven at 175 degrees for 30 to 40 minutes.
