Pumpkin fritters

Ingredients for 4 servings:

  • ½ small pumpkin(s) , (butter pumpkin)
  • 2 eggs
  • pepper
  • Salt
  • Flour
  • 2 tbsp sunflower seeds
  • Oil (sunflower oil)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Deseed and peel the pumpkin, and coarsely grate it. Add the eggs and spices. Stir in enough flour to form a thick batter. Immediately fry the batter in a pan until it forms fritters. A yogurt and spring onion dip goes perfectly with this.
