Ingredients for 1 servings:

  • 1 large schnitzel of pork, turkey, chicken, beef or tofu
  • 1 m.-large zucchini, green
  • 90 g mushrooms, fresh
  • 1 small red pointed pepper
  • Coconut oil or other cooking fat
  • salt and pepper
  • 2 dashes balsamic cream
  • some fresh basil or other herbs
  • 100 g cream cheese
  • 2 tbsp port wine or Chantré Rouge, alternatively vegetable stock
  • 4 small cocktail tomatoes
  • n. B. onion(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Sliced ​​meat with zucchini and balsamic vinegar, also available vegetarian

Cut the meat or tofu into strips, and the mushrooms, zucchini, and bell peppers into thin slices or strips. Heat the oil in a pan and fry everything together until the meat is cooked. For me, this takes about 8-10 minutes. The vegetables should still have a bit of bite. If you like, you can add an onion while frying, but it’s not necessary. Season with salt and pepper. Mix in the cream cheese and port wine (or vegetable stock if you want it non-alcoholic). Add a couple of dashes of balsamic vinegar and season to taste. Cut the tomatoes into small cubes and add them. Roughly chop the basil leaves into strips and sprinkle over the food.
