My sourdough rolls
- 300 g Whole wheat flour
- 300 g Spelled flour 630
- 10 g Salt
- 1 tsp Raw cane sugar
- 15 g Fresh yeast
- 250 ml Lukewarm water
- 150 g Homemade sourdough “Marvin”
Main dough
- Put whole wheat flour & spelled flour in a mixing bowl / food processor. Mix with salt & raw cane sugar. Then add the crumbled fresh yeast. Pour lukewarm water over it and knead it briefly.
- Then add the sourdough and knead again, about 3 minutes. Flour a work surface and place the kneaded dough on top. Bring into shape once with clean hands. Put the dough in a bowl that has been lightly oiled beforehand.
- Why oiled? This makes the dough easier to get out of the bowl without sticking to it. Then put in a warm place, cover and let REST for about one (2) hours. Then take it out and place it on the floured work surface again.
- Knead again with clean hands and shape into a strand, roll out and divide with a card. Now work the whole thing round and shape it. Cover again and let RISE for 30 minutes in a warm place.
- Preheat the oven to 220 ° degrees top / top / bottom heat or if you like, you can also set the fan to 200 ° degrees. Then place on the tray or stone and, when preheated, slide onto the middle rail. Bake here for about 25 minutes, remove and let cool on a rack.
