My sourdough rolls

  • 300 g Whole wheat flour
  • 300 g Spelled flour 630
  • 10 g Salt
  • 1 tsp Raw cane sugar
  • 15 g Fresh yeast
  • 250 ml Lukewarm water
  • 150 g Homemade sourdough “Marvin”

Main dough

  1. Put whole wheat flour & spelled flour in a mixing bowl / food processor. Mix with salt & raw cane sugar. Then add the crumbled fresh yeast. Pour lukewarm water over it and knead it briefly.
  2. Then add the sourdough and knead again, about 3 minutes. Flour a work surface and place the kneaded dough on top. Bring into shape once with clean hands. Put the dough in a bowl that has been lightly oiled beforehand.
  3. Why oiled? This makes the dough easier to get out of the bowl without sticking to it. Then put in a warm place, cover and let REST for about one (2) hours. Then take it out and place it on the floured work surface again.
  4. Knead again with clean hands and shape into a strand, roll out and divide with a card. Now work the whole thing round and shape it. Cover again and let RISE for 30 minutes in a warm place.
  5. Preheat the oven to 220 ° degrees top / top / bottom heat or if you like, you can also set the fan to 200 ° degrees. Then place on the tray or stone and, when preheated, slide onto the middle rail. Bake here for about 25 minutes, remove and let cool on a rack.
