Bean salad with smoked char

Ingredients for 4 servings:

  • 200 g beans (borlotti)
  • 2 shallots
  • 2 tomatoes, dried
  • 100 ml vegetable stock
  • 1 tbsp mustard
  • 50 ml Balsamic vinegar, white
  • ½ bunch fresh basil
  • 2 fish(s), smoked char
  • salt and pepper
  • Sugar
  • olive oil

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Soak the borlotti beans overnight and simmer gently in salted water until softened. Dice the shallots and sauté lightly in olive oil. Finely slice the sun-dried tomatoes. Mix the drained beans with the tomatoes and shallots. Mix the broth, mustard, salt, sugar, and balsamic vinegar into a vinaigrette and toss with the salad. Add the chopped basil before serving. Halve the char and briefly heat each half in a pan with hot butter. Serve on top of the salad (1/2 char per person). You can also garnish with freshly ground black pepper.
